A delicious homemade cornbread recipe that comes from a vintage hotel The Baldpate Inn.

Cool, right! The hotel was founded in 1917 by brothers Charles Mace (combat and commercial photographer, 1889-1973), and Gordon Mace, and their families.

The Inn, located in Estes Park, Colorado is known especially for two reasons: the hotel was named for the popular mystery novel, play and films Seven Keys to Baldpate by Earl Derr Biggers, and was eventually accepted to be the "true" Baldpate by the author.

While the hotel originally gave away keys as curios, today it is known for its collection of more than 20,000 keys, usual, unusual and figurative, that have been offered to the inn by visitors, hotel guests, and dignitaries from all over the world.

Historic Hotel Recipe

Ingredients:

  • 1 Cup butter

  • 1 Cup sugar

  • 4 eggs

  • 2 Cups creamed corn

  • 1/2 Cup grated Monterey Jack Cheese

  • 1/2 medium grated Cheddar Cheese

  • 1 Cup all purpose flour

  • 1 Cup yellow cornmeal

  • 4 teaspoons baking powder

  • 1/4 teaspoon salt

directions:

  1. Preheat oven to 350 degrees.

  2. Use an electric mixer and cream butter and sugar, then add eggs one at a time.

  3. Gradually add in cheeses and corn.

  4. Stir in remaining ingredients. Spread evenly into a 9x13 greased cake pan.

  5. Place in oven and immediately reduce the temperature to 300 degrees

  6. Bake one hour. Top will seem moist- looking not dry like cake.

  7. The center should be set not gooey.

  8. Serve warm!
